Appetizer recipe in Huntington Beach
A bag of Mini Bell Peppers (Costco and Trader Joes)
Laughing Cow cheese
Slice 1 wedge of laughing cow cheese into 3rds.
Cut tops of bell peppers off and stuff cheese into pepper
Bake at 425 for 20 minutes.

I have decided to post the weigh in's for all 7 of my meetings at the end of each week. That way we can have a little competition going between each meeting. Lets see who won this week:
Monday, 3-14 at 9:30 am - Long Beach lost 91.4lbs (39 members lost weight)
Tuesday, 3-16 at 12:15 pm - Fountain Valley lost 43.6lbs (24 members lost weight)
Friday, 3-18 at 9:30 am - Fountain Valley lost 65.6lbs (35 members lost weight)
Friday, 3-18 at 12:00 pm - Golden West College lost 10lbs (8 members lost weight)

Coleslaw Recipe from Fountain Valley
Last week Anne was talking about this wonderful Coleslaw she makes. Well here it is:
4 cups packaged Coleslaw mix (shredded carrots and cabbage)
1/4 cup Best Foods light Mayonnaise
25 nuts cooked salted peanuts
2 tbsp apple cider vinegar
1 tbsp sugar substitute
1/4 cup red onion, finely diced
Let sit for an hour before serving to let ingredients settle.
4 servings

(saute in pan with spray olive oil)
1 cup fresh spinach - 0 pointsplus
1 cup cooked whole wheat spaghetti - 4 PointsPlus
2 tablespoons Trader Joes Spicy Peanut dressing - 2 PointsPlus
Mix all together and enjoy!!! 7 PointsPlus
