Walk It Challenge
This week we launched the first week of the Walk It Challenge. If you are able, I hope you are planning on training and participating in a 5k. The date for the walk it challenge is Sunday, May 22. I am currently looking for a location that is centrally located for all my meetings. I will post location and time as soon as I know. If you want to order a walk it t-shirt that I created, log onto weightwatchers.com/walkit and enter the number #147. You can also change the saying on the back to say whatever you want it to. Golden West College won this week with an average of 3.3 lbs per member losing weight. Huntington Beach 8:30 am came in second with an average of 2.11 lbs per member losing weight. Awesome!!!!!

Creamy Lemon Pie
Many of you missed last week's weekly recipe so here it is: 4 PointsPlus Per Serving (serves 10) 6 whole reduced fat cinnamon graham crackers, 2 tbsp butter 11 oz fat-free sweetened condensed Milk, 2 large eggs, 1/2 cup fresh lemon juice, 1 tbsp lemon zest. Preheat oven to 350F, Grind graham crackers in a food processor until fine crumbs form. Or place crackers in a resealable plastic bag and crush with a rolling pin. Place crumbs in a small bowl. Melt butter and pour over graham cracker crumbs, mixing with a fork until completely moistened. Press crumbs evenly onto bottom of a 9-inch pie pan; place crust in refrigerator while preparing lemon filling. In a medium bowl, combine condensed milk and eggs; mix until smooth. Add lemon juice and zest; stir until incorporated and pour into prepared crust. Bake pie for 15 minutes. Cool completely and for best flavor, serve chilled. Yield 1 piece per serving.

Saturday in Huntington Beach: 7:00am meeting, 18 members lost 30.6 lbs, 8:30am meeting, 38 members lost 63.2 lbs, 10:00am meeting, 27 members lost 49.2 lbs. The weigh in's were all so close this week but the Huntington Beach 10:00am meeting won this week's weigh in at an average of 1.82 lbs per member that lost weight. Congratulations to all!!!!

Laughing Cow cheese
Slice 1 wedge of laughing cow cheese into 3rds.
Cut tops of bell peppers off and stuff cheese into pepper
Bake at 425 for 20 minutes.

Coleslaw Recipe from Fountain Valley
Last week Anne was talking about this wonderful Coleslaw she makes. Well here it is:
4 cups packaged Coleslaw mix (shredded carrots and cabbage)
1/4 cup Best Foods light Mayonnaise
25 nuts cooked salted peanuts
2 tbsp apple cider vinegar
1 tbsp sugar substitute
1/4 cup red onion, finely diced
Let sit for an hour before serving to let ingredients settle.
4 servings

Lunch Today
1 cup Trader Joe's stir fry vegetables - 1 PointsPlus
(saute in pan with spray olive oil)
1 cup fresh spinach - 0 pointsplus
1 cup cooked whole wheat spaghetti - 4 PointsPlus
2 tablespoons Trader Joes Spicy Peanut dressing - 2 PointsPlus
Mix all together and enjoy!!! 7 PointsPlus
*optional-add 3 oz. Tofu for 2 PointsPlus
